Happy 4th!

I’m off to watch fireworks. Happy Independence Day my US friends. To everyone else, what have you been up to? I learned a new grilling thing. You can make a modified chili relleno by putting the chili pods on the grill. They skin much better that way. Then stuff them with cheese and put right back on the grill just long enough to melt the cheese. It makes a very tasty no-batter chili relleno.

Microwaved Fish

Another quick and easy “recipe”. You take a frozen fish fillet like they sell in single serving packs or large packages with each piece individually sealed in plastic. Put it in a flat, microwave safe container. Rub with garlic. Cook in bursts of on minute on and one minute off for two to four rounds, depending on your microwave. Drizzle with lemon juice and sprinkle with pepper. That’s all it takes.

Instant Smoothie

Short of buying it pre-made I can’t think of a quicker or easier way to get a smoothie. Combine aprox half a cup of plain yogurt with 2 Tablespoons of fruit syrup and one cup of milk.

Peaunut Butter Slices

1 c butter 1/2 c peanut butter 1/2 c granulated sugar 1/2 c packed brown sugar 1 egg 1/2 tsp vanilla 2 1/4 c flour 1 tsp baking powder Beat butter, shortening, and peanut butter together. Cream Cheese Rolled Cookies

2 c flour 1/2 tsp baking powder 1/2 c butter 4 oz cream cheese 1 c sugar 1 egg 1/2 tsp vanilla Beat butter and cream cheese for 30 seconds. Add sugar, and beat till fluffy. Add egg and vanilla. Carrot Salad

6 or 7 carrots 1 T. lemon juice 1 T. sugar Grate the carrots. Combine with lemon juice and sugar. Place in refrigerator. This can be served immediately, but doesn’t really taste it’s best until about an hour later.

Hamburger Cordon Bleu

hamburger cheese sliced ham hamburger buns lettuce etc. Cut thin slices of hamburger. Build hamburger around the cheese and ham layer, being sure to completely enclose it, pinching along edges as necessary. Fry until patty is cooked all the way through. Place patty on hamburger bun along with lettuce and any other fixings as desired. It takes a bit longer than simply adding cheese to the burger on top of the patties, but I think it’s worth it.

Hot Googly Eyes

4 hard boiled eggs 1T mole sauce (hot variety) 2 tsp ranch salad dressing Mozzarella Ciliengini (cheese balls in water) Cut eggs in half. Scoop out yolk into a bowl. Add sauce and dressing. Fancy Microwaved Eggplant

1 eggplant 5 saltine crackers 1 egg 3 T milk Cut eggplant in half. Microwave for 2-4 minutes, or until partly soft. Combine crackers, egg, and milk. Scoop out middle of eggplant. Add to mixture, including seeds and mix. Place half of mixture in to centers of each half of the eggplant. Microwave for 1-2 minutes until mixture sets. Salt to taste.

English Toffee Bars

1 c. butter 1 c. brown sugar 1 egg 1 tsp vanilla 2 c. flour 1 pkg chocolate chips Beat butter for 30 seconds. Add brown sugar and beat until fluffy. Add egg yolk and vanilla; beat well.
