Simple Spinach Salad

1 bunch of fresh spinach Mushrooms, tomato, onion, bell pepper, etc to taste Spritz style salad dressing Wash the spinach thoroughly. Reduce or remove stems. Add desired vegetables. Pork Chop Fricassee

. . I suppose this is more of a tutorial than a recipe. Heat a pan. I use a black iron skillet. Sprinkle seasoning salt in the pan, then place pork chops or pork steak on top. Brown on both sides. Add about a cup of water. Adjust heat to simmer. Allow all the water to boil off. Repeat as necessary until chops are cooked all the way through. There should be a brown residue in the pan. Hush Puppies

. 2 c corn meal 1 c flour 2 tsp baking powder 1 1/2 tsp salt 1 Tbs sugar 1/2 c milk 3/4 c water 1/2 c cooking oil 1 egg Combine dry ingredients, mixing well. Add remaining ingredients, stirring until smooth. Drop by tablespoon full into hot oil. Give it a minute or two, then turn. Remove from pan, draining oil. Makes a couple dozen. Okra Bowl

1/2 c water 1/2 pkg frozen okra 2 slices ham, cut in 8ths 2 mushrooms, sliced 1/4 c diced onion 1/2 tsp salt, scant black pepper Combine all ingredients in a pot. Bring to a boil, then simmer for 10 minutes. Use slotted spoon to serve. Um…. this one might be an acquired taste. I happen to like boiled okra. Click the picture to go to the hub:

Pistachio and Cookie Parfait

This is a quick and easy one, but better for kids because it tends to be too sweet. 1 small package Pistachio instant pudding 6 medium cookies. Mix ups the pudding, following directions. Immediately spoon into parfait glasses, alternating with crumbled cookies. Takes approximately one cookie per glass. Makes six small glasses. Orange Date Bars

1 c flour 1/2 tsp baking powder 1/4 tsp baking soda 1/4 c butter 1/2 c brown sugar 1 egg 1 tsp shredded orange peel 1/4 c milk 1/4 c orange juice 1/2 c snipped pitted dates 1/2 c chopped walnuts sprinkle of powdered sugar Combine dry ingredients. Grape Short Cake

This is surprisingly good. 1 3/4 c flour 1/2 c sugar 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp cinnamon 1/2 c vegetable oil 2 eggs 1 tsp vanilla 1 c crushed grapes Stir together the dry ingredients, then add the wet. This one is a handy way of using up apple sauce when I have too much left over from something else. Quick Mix – Cuisenart Version

This is a mix that works a lot like Bisquick. Only without preservatives. You can follow the original recipe here. a lot of flour (see directions) 1/3 c baking powder 1/4 c sugar 4 tsp salt 2 c shortening in 2/3 c portions three times Measure out one cup of flour in a measuring cup that will hold more than two cups.
