The girl said it tasted like banana bread with frosting, but the entire cake got eaten in a day, and the banana bread never goes that fast. I think it’s a little fluffier.
2 ½ c flour
1 ½ c sugar
1 ½ tsp baking powder
1 tsp baking soda
1 tsp salt
½ c shortening
1 c mashed banana
2/3 c milk
1 Tbsp lemon juice
2 eggs
1 tsp vanilla
cream cheese frosting
Mix everything from shortening through vanilla. Combine everything from flour through salt, them gradually add to shortening mix. Pour into cake pan(s). Bake at 375 F for about 30 minutes, or until toothpick comes out clean. Let cool. Frost.
