Deviled Boats

              3 hard boiled eggs 2 Tbs. mayonnaise a pinch of paprika salt and pepper to taste 6 Wheat Thin crackers Cut hard boiled eggs in half.  Remove yolk.  Mix with seasonings.  Stuff yoke mixture into egg hollows.  Place on plate or tray.  Stick crackers into egg mixture on edge so they stick up like sails.  Sail into your mouth. Little raison crew optional.

Bird in the Rice

1 c. cooked rice 1 pkg dry soup starter – onion or mushroom 1 c turkey or chicken 2 c milk In a small casserole dish layer rice, then turkey or chicken meat. Mix dry soup with milk, then pour over rice and poultry. Put in oven at 350 for 1 hour. Also good with a couple of tablespoons of tomato paste mixed into the rice.

Split Pea Soup

Quit wrinkling your nose. This is not like the slop they fed us in school. 2/3 c. dried split peas 2 1/2 c. water 1/4 tsp salt 1/4 c. chopped onion 1/3 c. chopped ham additional salt and pepper to taste Put water in a medium pot. Crunchy Blue Invader

The boy created and named this one. Place one marshmallow in a microwave-safe bowl. A Pyrex custard cup works well. Sprinkle Blue Crystal Decors under and over the marshmallow. Heat in microwave on high for aprox 10 seconds. The marshmallow should be slightly puffy. Add more decors. Heat for additional seconds until marshmallow spreads. Add decors. Stuffed Lettuce

1 large head of iceberg lettuce 1/2 c mayonnaise 1/4 tsp curry powder 1/2 c cooked chicken breast 1/4 c chopped celery 3/4 c sliced waterchestnuts 1/2 c chopped onion 1 c salsa w/ cheese Wash lettuce; remove core and hollow out center, leaving a 1/2″ to 3/4″ shell. Combine mayonnaise and curry powder; toss with waterchestnuts, chicken, celery, and onion. Spoon into lettuce shell. Chill several hours. Just before serving, slice into wedges. Top with cheese and salsa.

I got this one from my mother, whom – I believe – got it from a newspaper years ago.  This one is not diet food. 1 c flour 1/3 c cornmeal 2 tsp baking powder 1 tsp sugar 3 Tbsp butter 1 pinch salt 1/2 c milk Mix dry ingredients.  Cut in butter.  Gradually add milk.  Kneed into a ball.  Break off fist sized balls from the main ball.  Pat flat with hands until about 1/2 inch thick.  Drop into frying […]

SOS

The actual name for this recipe is something like Shtuff on a Shingle.  It’s something my grandmother would whip up when she ran out of time or was too tired to cook. 1 can cream of mushroom soup 1 jar chip beef toast Warm chip beef and can of soup on stove.  Pour over slices of toast.  Serve.

Afterburner Hash

7 potatoes, grated 1 can corn beef, cubed ketchup Habanero hot sauce too much butter . . Melt about two tablespoons worth of butter in a medium size pan.  I like cast-iron for this.  Toss in grated potatoes and cubed corned beef.  Fry.  What you’re shooting for here is to have the potatoes soft on the inside and crunchy on the outside.  Sprinkle Habanero and ketchup right before eating.  Get the right sauce and you won’t know it’s hot until […]

Club House Sandwich

I couldn’t remember exactly what went into a club house sandwich until I ran across it in the Don’t Eat Your Heart Out cookbook: 3 slices toast lettuce leaves cooked chicken breast, sliced safflower mayonnaise sliced tomato To first slice of toast with lettuce, chicken and mayonnaise.  Top with second slice of toast; add tomato slices and top with third slice of toast.  Slice diagonally into quarters. Really, I had no idea.

Baggy Comparison

I saw these in the store and wondered how they’d work.  So I got two different kinds and tested them.    The Glad is an odd bag.  It looks smaller here, but it has a folded bottom that pops out like a paper grocery bag when in use so it actually can hold more.  The instructions, however, recommend putting in the same amount.  I put in a basic cabbage mix:  cabbage, carrot slivers, and onions.    Much to my disappointment they […]
